lemon Carrot Loaf cake 본문
어제 베이킹을 하고 갑자기 Andrew의 Carrot Cake이 생각나서 이멜을 뒤져서 recipe를 찾아냈다.
조만간 만들어봐야지!
치즈 그라인더를 사야겠다..
lemon Carrot Loaf cake

225g/8oz/2 cups self raising flour
15ml/1 tablespoon baking powder
150g/5oz/(2/3)cup butter or margarine
100g/4oz/(1/2)cup light brown sugar (Maybe a little less)
2 large carrots, grated
1 Large Lemmon (Grate the rind), and squeeze the juice.
(Optional) Raisins, as many or few as you like
[as well as, or instead of, raisins, you can add, walnuts if you like
those, or cranberries if your feeling Canadian or whatever]
Mix flour and baking powder.
Melt the butter/margarine and mix with sugar.
Pour this into the flour and mix well.
Stir in the carrots, these will make it moist and hold it together.
Add lemon rind, and raisins.
Mix and slowly add the lemon juice.
Should become a sticky dough.
Spread into a greased loaf tin.
Bake in a pre-heated oven at 160C/325F/gas mark 3 for 1 hour (until a
knife/skewer inserted into the centre of the cake comes out clean.)
Turn out and allow to cool.
